The project started in 2014 as an art installation and slowly evolved to The Smallest Pizzeria in The World. Our oven's the biggest in Europe, so we have the unrivalled speed of 30-40 pizzas an hour. Our pizzas are sourdough and made from organic flour. We will make the dough for your event the night before so that the dough is proofed for nearly 24 hours. This slow proof improves flavour and makes the dough more easy to digest. Even for wheat intolerant individuals (but not coeliacs). The tomato sauce is made from extremely high quality first press olive oil, 16 year aged balsamic vinegar, Maldon salt, grade 1 Italian tomatoes (these cannot be bought in supermarkets) and high grade dried oregano. The mozzarella is local (Glastonbury farm) but they were taught in traditional Italian methods of preparing mozzarella. You name it we'll do it! After eating our way round Naples we decided to have a 1 metre pizza oven built and call her Rita a great addition to our event catering company! We can fire her up anywhere! Based in Cheltenham in Gloucestershire we will travel to all the surrounding counties in the Cotswolds as far as Bristol, Bath and Birmingham. We have our ingredients shipped over from the motherland Italy. It starts with the dough using only 4 ingredients including Caputo '00' flour we ferment our dough for 48 hours.
