MY intention its tranlate to flavours all the memories of where I come from, like Tapas are popular in Andalucia and Pais Vasco,Paella is very popular in Valencia and Catalunya,the Tortilla Espanola have memories of history from Canarias to the North of Spain etc...My target its to bring diversity and to enjoy something new.
I' m trying to addapt my cooking style to the local food,like Spanish Tortilla made with Black pudding?,or mixt bacon dices with the dough? green and black olives in a muffing?...I' m really enjoying this guys.!
