All my paellas have the high quality short grain rice from Valencia (L’Albufera), which grows in the natural park of the same name and is the place where paellas originate. In addition to the rice, each paella will have extra virgin olive oil, grated tomato, saffron, and sweet smoked paprika ‘from la Vera’.
I have included a sample menu below, but these are subject to seasonal ingredients and their availability:
-Paella Huerta (vegetarian/vegan): green beans, red pepper, asparagus, sundried tomato, mushroom, cauliflower, spring onions, white beans, fava beans, and garlic.
-Paella Benidorm (seafood): cuttlefish, king prawns, mussels, asparagus, onion, red pepper, and garlic.
-Paella Monte (meat): boneless pork chops, mushrooms, red pepper, raisins, and butter beans.
-Paella Valenciana: Boneless chicken, stringless beans, butter beans, red pepper and rosemary leaves.
