Our oven's the biggest in Europe, so we have the unrivalled speed of 30-40 pizzas an hour. Our pizzas are sourdough and made from organic flour. We will make the dough for your event the night before so that the dough is proofed for nearly 24 hours. This slow proof improves flavour and makes the dough more easy to digest. Even for wheat intolerant individuals (but not coeliacs). The tomato sauce is made from extremely high quality first press olive oil, 16 year aged balsamic vinegar, Maldon salt, grade 1 Italian tomatoes (these cannot be bought in supermarkets) and high grade dried oregano. The mozzarella is local (Glastonbury farm) but they were taught in traditional Italian methods of preparing mozzarella. The toppings are the finest, local produce and produce from Italy and you can have complete control of topping types or let us create a fantastic menu for you. The whole thing is cooked in our one-of-a-kind wood fired oven and so gets a slight smoky flavour from the kiln fired beech we use to cook your pizza.
