From The Hut
I’m a keen chef with many years’ experience in the hospitality industry. I started the business in late 2016 in order to bring something a bit different to festivals, fairs and private events. It was called The Cracking Rib Company.
Once I’d decided on a mobile catering business, the next question was how to make the catering mobile. There are so many options out there but I was immediately drawn to the rustic, country look of a shepherd’s hut. I soon found the perfect combination of shepherd’s hut and mobile catering trailer and towed it home in November 2016.
My initial idea was for a very simple menu, with just the one dish - marinated, stripped pork ribs served with rice. That dish has been extremely popular and pork is still at the centre of what I offer. However, in 2018 my wife and daughters decided that we should expand to offer Belgian waffles. A little random I thought but we gave it a go and hit on another very popular dish. As the menu gradually expanded, and was much more than simply ‘cracking ribs’ I started to think that the name needed to change. Looking back of course, we had made the classic mistake of giving the business such a niche name that it wouldn’t really work if we expanded our offering! But you try telling that to someone who is so caught up in the exciting plans of a brand new business…
